For me when any Sabbat,Esbat or Holiday comes around and Im too busy to really do anything. I just have like a little thankful meditation or just anything in respect to the Holiday. In my opinion even the smallest thing is better than doing nothin.
I was at a drummin last march for the spring equinox and was really annoyed when a girl approached a couple with the drumstick and they refused to participate, tellin her not to ask them to go ask someone else. To me that is disrespect to the gods/goddesses. Any kind of act to the gods/goddesses is to me greatly looked at their eyes. It tells them that u are not one who just passes it by without a thought.
Another great idea would be to just light a candle and just meditate on the Sabbat. Meditate on what it means. Thank the Divine for everything they have done for u and will continue to do. How u will help them.

It is a worse offense before the gods to act before Them without sincerity, without truly wishing to serve Them and to do Their Work.
You cannot compel sincerity.
You have NO idea as to why this couple chose not to participate. You are interpreting it as being disrespectful to the Gods, but in truth you know nothing. If you are going to get that offended by things about which you know absolutely nothing, then perhaps this isn't the religion for you. Or perhaps you need to go back an take a serious look at just exactly what it is you believe and why you believe it.
I'd think it'd be more of an offense to God & Goddess to feign sincerity and interest in an activity dedicated to them, than to opt out of something they either didn't agree with or just had some other reason for not participating. No one can know why, but I'm sure they had their reasons, if mundane or otherwise.
If the couple in question did not feel the need to participate, for whatever reason, to do so anyway would be a true act of disrespect toward the Gods.
EDITED TO ADD: Allow me to propose some reasons why the couple might not have wanted to drum.
1) Someone close to them had recently passed away, and they were grieving. 2) They'd just had a fight and were directing their energies toward their relationship, not toward music making. 3) One (or both) of them had a cold and didn't feel they could take part in the energy flow properly. 4) They have no sense of rhythm. 5) They just didn't feel like it at that moment.
Yeah, that same logic has passed through my mind I-dunno-how-many times. I just don't have anyone to do that with. :( Though I'm sure my ex wouldn't say no... I don't wanna go down that route. xP
Does self-love count? There's always time for that! :D Though I am human and thus not asexual, it still could have some sort of the same effect, symbolically, eh? *lol*
In a magical sense, probably not. If what we're talking about is the re-enactment of the Heiros Gamos, the joining together of God and Goddess in the Sacred Marriage, which is generally what is being celebrated at Beltane, almost certainly not.
But please, don't let that stop you from having fun. Anything that brings joy into your life is a good thing, and therefore something to be encouraged for its own sake. You should NEVER need a special occasion to experience joy.
Sex isn't the only way to celebrate Beltaine, otherwise you might as well call it Sexmas and leave the old, deeper and more spiritual* aspects out of it. It is similar to Samhain in many respects. I agree with an above commenter. Sex with someone you care about is a traditional celebration.
