Help! My TextEdit is Possessed!

So I was writing up some HTML for a glossary of Anglo-Saxon words, which included coding for a number of special characters (ð, æ, etc...), and the first time I uploaded it, it looked just fine. I've now tried to add in a few more words, and now the entire document is showing up as Chinese characters when I try to upload it. What the hell is

It's very odd. If I look at the page source all I can see after 'expert' is a single line of Chinese characters.
