Eggplant Pilaf with Pistachios and Cinnamon

Ingredients
1 small eggplant (1/2 lb), cut into 1/2-inch cubes
2 tablespoons salt
1/4 cup extra-virgin olive oil
2 medium onions, finely chopped
1 cup white basmati rice
1 1/2 cups water
1/4 cup raisins or dried currants
3/4 teaspoon cinnamon

I was about to say, in order to get the hubby to eat it and consider it an entree, I'd have to add some meat...but you beat me to it. Hmmm. I haven't made a pilaf yet. I've made some caseroles, but not a pilaf. And we have some fresh oregano and fresh parsley in the fridge, but not dill--and just had eggplant last night. But maybe I'll try and make this over the weekend. I know I would like it, but still might need to convince the picky hubby (he tends to like more salty/savory flavors than cinnamony/baking/sweet flavors, like me). Ah, compromise. I love Fall cooking flavors, though.
