Jamaican Ginger Beer Results

I'm disappointed in my ginger beer. It's somehow simultaneously too strong and too watery. And it's not fizzy or sparkly enough. How do people get it so fizzy sparkly without using sparkling water? It's better when I add more brown sugar and lime but I want fizzy dammit ( Read more... )

here's the recipe my mother uses. she got it from a jamaican friend:
1/4 c grated ginger
3/4 c sugar
4 c water
juice of 1/2 lime
1/2 package yeast

combine and let stand at room temp for 24 hours. strain and refrigerate.

whoa, that's a lot of sugar :)
do you know if it comes out fizzy?
i got a recipe from my ex-boyfriend's mom who got it from friends in jamaica too, but i lost the damn thing. it was all the same ingredients though except without the yeast and i think the proportions were different. i'll just keep experimenting until i find what i like.
