as for the taste is all due to the Capsaicin (trans-8-methyl-N-vanillyl-6-nonenamide) the most potent of a group of chemicals called capsaicinoids, which are responsible for the burning sensation and other effects caused by chili peppers (genus Capsicum) or the sauces made from them.
