While that's true, I'd rather shift my tastebuds to accept a less obviously buttery taste than risk the impact on health. Which is, really, what I've done. Using coconut oil in cooking isn't something that was a big thing when I went veggie in the UK in early 1989, or when I went vegan in the US in 1996, and because I'd already found good alternatives and shifted my tastes to less fatty products, I never explored it even when I started to see it being promoted vigorously a few years ago.

To be honest, the main audience for my (now rarely made) pastries and cakes are non-vegetarian family and friends who tell me they thoroughly enjoy them, so it doesn't seem to me that taste and texture are being lost at all by sticking with non-hydrogenated (non-trans fat) products that don't include coconut oil.

Coconut oil's FAB for skin and hair, mind. It just does a number on your arteries.
