I think you definitely could, yes! It really doesn't need much butter at all, so whatever substitutes you'd usually use would be totally fine -- I think the 100% canola margarine stuff would work just as well. And GF oats and/or flour substitutes would also not substantially change the taste, I don't think.
:DDD Glad to hear it! (And great to hear from you!) I think it should be adjustable in a lot of regards -- the gluten and dairy can probably both come out pretty easily, I think. I made it again this morning with wayyyy more ginger and that was definitely good too. :D
