This is not the journal post I was intending! ...except I have hockey work to do that I've been putting off since Tuesday, so I'm gonna do that now and leave this here until then.
L. bought a bunch of pears last week and then kept forgetting to eat them, and forgetting to eat them, and forgetting to eat them until he had to ask me to bake something with them. For the record, peeling pears SUCKS ASS and unless you have no other option I basically advise you to just buy tinned pears instead, because pears can FUCK OFF! /Eddie
So anyway, I threw this together and it was delicious, and I'm assuming twitter was serious when y'all asked for a recipe, so.
Chocolate, Cinnamon and Ginger Apple/Pear Crumble: WITH BOOZE
I pretty much just threw this together by eye, so don’t feel like you have to stick right by any of the volumes - adjust to taste! (The Flat likes a lot of ginger. (Insert joke about our cat here.)) But seriously, less a strict recipe per se and more a “list of everything I just threw in a bowl which resulted in deliciousness”.
TUMBLED CRUMBLE!
Chop enough apples and/or pears roughly to fill about 90% of a large oven-proof bowl.
Pour as much booze - I picked coconut rum, because why not - as you’re comfortable with over the fruit. It’ll either reduce or you’ll have self-saucing crumble. Everyone’s a winner!
Shake some cinnamon on top of the fruit, because you can’t have too much cinnamon, right?
In another bowl, mix together the following:
- 50g of butter (softened or melted)
- a tablespoon of baking cocoa
- a teaspoon (or more) of ginger
- a teaspoon (or more) of cinnamon
- a teaspoon of baking powder (you can skip this one, and if you use less than a cup of flour, DEFINITELY reduce the baking powder to match)
- three tablespoons of brown sugar
- a splash of vanilla essence
- keep adding flour until the crumble mix makes fine, dry crumbs.
I’m sure you could substitute oats for some/a lot of the flour and it would still be great, we just didn’t have any oats.
Just sprinkle as much crumble as you want to eat over top of your fruit, and then stick it in the oven - I go for about 150C/300F, because the fruit bakes better and also I’m fucking lazy about getting up to take shit out of the oven in a hurry - and when it smells delicious from about ten feet away then it’s done. Or, you know, when it browns on top. But our oven light is broken SO.
For the record, this made a SHIT TONNE of crumble - I covered a huge bowl thickly AND a second smaller bowl, so if your bowl is smaller/you prefer a higher fruit to crumble ratio, then halve all of the above.
