Actually, I work at a school, and am called "sensei" all the time. <3 Reguardless of what doujinka are called (they cal each other '-san' and '-sama' all the time, I don't see sensei thrown around cause none of them are prosyet)

But hey you know. It might be good for future reference. Say I met them at a panel at a con or something, would it be theoretically correct to use '-sensei' when talking to them directly? (What? I can't help myself.)

Yes, if you speaking directly to them, -sensei is MORE then okay to use.
