And weirdly, when you freeze and then defrost and reheat it, the curry will be have a little more kick in the spices!

That's true for a lot of foods. Sitting overnight before or after cooking lets a lot of flavors mingle and develop.

Lasagne also tastes really nice if allowed to stand overnight :)
