Yeah one gallon I would say is definitely too tiny for 2 goldfish. Just curious, why were you looking online for information instead of asking people where you bought the fish? At any rate, most goldfish I've seen will grow with their aquarium, so if you keep it small, he should in theory stay small. You may want to consider a snail for your bowl to help keep it clean, but if you do consider that, make sure to ask questions and get one that is not asexual otherwise it will quickly become they, and they will overrun the bowl and kill the fish. A snail may be an easier option than a filter. If you do get a filter AND a snail, DEFINITELY and I cannot stress this enough make sure the snail will not be reproducing on its own. We ended up with snails living and breeding in the filters and it was a disaster.

1 gallon is too tiny for even one goldfish. The average rule is a gallon for an inch of fish (but even then you should always get as big of a tank as possible), but it's at least twice for goldfish since they create a lot of waste.

Gathering information online is a good idea, as long as you look at several sources.

Goldfish do not stay small in small tanks. They can grow to be quite large.

Snails will eat up excess food (excess food will rot and lower the water quality), but they don't really eat fish poop and they poop as well.
