Cautiously optimistic

Well, inspired by all the baking that people have been doing, and the arrival of our new oven, I decided to try a few things. Those being a banana loaf, and acarrot cake. Hey, good luck! Something I'll mention that I forgot whe nI posted about it is that I always replace oil in cake recipes with unsweetened applesauce (to reduce fat and increase moisture). You can do it either way, though, and it should be tasty. Let us know how it works out!

Ooh. That's a nice idea for me to try next time. Is it just straight volumetric replacement? And do you need to make any other adjustments?

Straight up replacement ,and I never make any other adjustments, although as I said, I think it is increasing the moisture somewhat (which is usually a bonus)
