Merry Christmas to you :) (I'm not going to a movie or having Chinese (to my knowledge) but I'll go do some volunteer work.)
I read earlier today (some friendspage or other) about someone going to a movie on Christmas and during the credits two guys in the front row stood up and started singing Hine Ma Tov and everyone in the theatre joined in. Amused.
OK, why do Jews eat Chinese food on Christmas Day? I only heard about this a few years ago for the first time, and this was on the Simpsons. (And I didn't know about the movie thing until today)
Of course then, you may rightly ask us why we bring dead trees into our homes and decorate them, so I suppose you got me there ...
The reason, as far as I can tell, is that most other restaurants aren't open on Christmas, but Chinese restaurants typically are. (At least, that's my own experience from attempting to get Christmas takeout...)
Chinese restaurants are somewhat more likely to be open than most other types, especially in parts of the country that don't have huge diverse ethnic populations of non Christians.
And movie theatres are open. Unlike, say, the Smithsonian.
