but at least I got the biggest, baddest chore done--my taxes! And while I'll be paying into the Feds again this year, it's not nearly as much as last year thanks to charitable deductions. Better yet, my State refund is quite a bit larger than last year. All that means I'll have enough money to take a small vacation to California at the end of June

10 brussel sprouts (or more if you want, depends on how much you like them and what else you're pairing them with)
1 tbsp. olive oil
2 tbsp. maple syrup
1/4 tsp. sea salt
(That amount of liquid was more than enough for 10 sprouts. You could probably put 15 or more sprouts in the same amount and still coat them all.)
Turn oven on set to 450°.
Mix olive oil, maple syrup and sea salt in a bowl. Whisk it until blended.
Trim the stem ends of the brussel sprouts, removing any wilted outer leaves. Cut in half. Toss in mixture in bowl until thoroughly coated. Spray a baking sheet with cooking spray. Place sprouts cut side down on baking sheet. Roast for 20-25 minutes, until sprouts are carmelized and fork tender.
Serves 2.
One serving (using 10 sprouts) has approx. 122 calories, 19 grams carbs, 5 grams fat, 3 grams protein and 5% of daily calcium.
