I've pretty much started having low carb shakes in the morning for breakfast with some OJ to get my blood sugar moving. Maybe a low fat yogurt.
Lunch is my carb time. Rice! SO MANY THINGS can be done with rice. Beef is my weakness, but since I shifted to rice, I'm eating chicken every day. Again, there are so many things to do with rice, and chicken just makes it better. :) Like right now, I made some spicy rice and cajun grilled chicken. And it's a full plate, but when added up, it's only 350-400 calories.
Tonight, I'll be making SPANISH RICE. I love that stuff, and really, it's just so fun cooking. I love it. I love knowing what I'm putting in my body, exactly. :)
You don't have to tell me how awesome rice and chicken is! A) I pretty much only eat chicken, barely any other meat B) I love cooking with rice C) my gf is Chinese ;-)
I don't want to watch my weight, I just want to eat more healthily. I've been staying away from chips and chocolate and soft drinks. I only drink water and maybe have a glass of juice.
I love me some tomato mozzarella salad. I eat it every day. The mozzarella is organic and we grow tomatoes ourselves.
Do you have any nice recipes? It's never wrong to get new ideas! :-)

Here's what I have down for a Spanish Rice recipe:
1 cup white minute rice 1 cup of brown minute rice 1/2 jalapeno pepper 1/2 serrano pepper 1/2 cup bell pepper 1/2 cup red onion 1 can petite diced tomatoes (approx 10.5 oz) 1 cloves garlic 2 tbsp onion powder 3 tbsp of chili powder 1 can beef or chicken broth (approx 10.5 oz) << can totally be substituted if you have bullion cubes. Just pop those in while cooking the rice
