My fat ass just did a 12.5, 12, and 11 minute mile.

And I feel fantastic!

Must go grocery shopping soon. I'm running out of healthy goodness in the house.

How do you mean? Recipes or my daily thing?

I've pretty much started having low carb shakes in the morning for breakfast with some OJ to get my blood sugar moving. Maybe a low fat yogurt.

Lunch is my carb time. Rice! SO MANY THINGS can be done with rice. Beef is my weakness, but since I shifted to rice, I'm eating chicken every day. Again, there are so many things to do with rice, and chicken just makes it better. :) Like right now, I made some spicy rice and cajun grilled chicken. And it's a full plate, but when added up, it's only 350-400 calories.

Tonight, I'll be making SPANISH RICE. I love that stuff, and really, it's just so fun cooking. I love it. I love knowing what I'm putting in my body, exactly. :)

What's Spanish Rice?

You don't have to tell me how awesome rice and chicken is! A) I pretty much only eat chicken, barely any other meat B) I love cooking with rice C) my gf is Chinese ;-)

I don't want to watch my weight, I just want to eat more healthily. I've been staying away from chips and chocolate and soft drinks. I only drink water and maybe have a glass of juice.

I love me some tomato mozzarella salad. I eat it every day. The mozzarella is organic and we grow tomatoes ourselves.

Do you have any nice recipes? It's never wrong to get new ideas! :-)

(I've been watching all seasons of QaF. I'm actually just watching the finale *cries*)

Here's what I have down for a Spanish Rice recipe:

1 cup white minute rice
1 cup of brown minute rice
1/2 jalapeno pepper
1/2 serrano pepper
1/2 cup bell pepper
1/2 cup red onion
1 can petite diced tomatoes (approx 10.5 oz)
1 cloves garlic
2 tbsp onion powder
3 tbsp of chili powder
1 can beef or chicken broth (approx 10.5 oz) << can totally be substituted if you have bullion cubes. Just pop those in while cooking the rice ( ... )
