Rosemary Cherry Walnut Scones

I baked a batch of impossible scones this morning. I say impossible, because I had plenty of dry ingredients and things to add flavor, but I've been broke and inventively working through my pantry staples for the past two weeks, which means I've been out of things like milk and butter for a good 10 days now. Holy crap, I'm in awe of your baking fu! Those scones sound amazing!

...so, just curious, what is the bacon fat in your fridge from? Do you just save bacon fat after cooking bacon each time (if so, how do you store it?), or did you manage to special-order just bacon fat from somewhere?!

I save the fat from cooking bacon, assuming it doesn't get used then and there to cook eggs or whatever. The crack bacon happens to render a lot of fat, and it's such good stuff that I'm loathe to let it go to waste. I let it cool a bit (or remelt it if it's had time to solidify in the pan), and store it in canning jars in the fridge until I need it.

It's so true. There is nothing that bacon does not play well with.

It was a grand trip. I was sorry not to be able to stay for the whole festival, and I will admit that I'm feeling a bit worse for wear today, but I am very glad that I went, and I think Isaac would have been (hell, probably was) extremely pleased to see all the folk coming together in community and celebration, and to see that what he built will continue to stand and grow for a long time.
