I hope you'll be okay, I've never really had a threat of hurricanes where I live, and it sounds pretty scary. Whenever you find the time to update I'll be eager to read! :)

Imo, the panic before the storm can be even worse than the storm itself. Or at least that has been my experience since living in Miami. We get several tropical storms every year, and hurricanes quite often as well, but every time people goes crazy. I've seen women fighting over food cans at the markets and men at gun point on gas stations (specially when big hurricanes are on their way), so the best is to get ready early, imo.
We are lucky it didn't hit hard in my area (north miami). Only got some rain and winds during the weekend, and the biggest problem we had was the light and internet going and on/off intermittently, but it seems to be getting stronger as it goes up north in the gulf, though, I think it's a good sing that it doesn't reach Cat 1 yet, even though they have been expecting it to do so since Friday.
Hopefully it continues as tropical storm even longer and doesn't have time to get to cat. 2 before reaching shore. (I remember when Katrina was over FL, it was already much stronger than
