Texas Chocolate Cake

This is the cake that Mom always served to us when we were kids. This is the cake that we requested for special occasions, birthdays, and any other time that we could get it. This is the cake that my cat ate. (I can't find that entry. If anyone else can, please let me know.)

It's easy, it's very forgiving, and it's so, so good. Here's the recipe

Texas Chocolate Cake
2 cubes/sticks margarine
1 cup water
4 T. cocoa powder

Melt and bring to a boil. Do not continue boiling.

2 c. flour
2 c. sugar
2 eggs
1 tsp. baking soda
1 c. yogurt or sour cream

Combine and stir. Once combined, stir in the melted chocolate mixture from above. Do NOT OVERBEAT.

Bake at 350 degrees for 30-35 minutes.

Frosting:
4 T. cocoa powder
1 cube/sticks margarine
5 T. milk
1 lb. confectioner's sugar (one box)

Melt and don't scorch. Beat with an electric mixer until smooth.

The real trick to a delicious version of this cake is to split the frosting and lay half of the frosting on while the cake is still hot. MMMM!
