Non-canon ship - Angel/Spike, surprising exactly no one. Like there was even the possibility I was going to say anything else.
Ship I don't like . . . I'm probably going to go with Angel/Cordy. I love both characters and I LOVE their dynamic when they're friends and the almost sibling vibe they have in the early seasons, but sexualizing their relationship really, really didn't work for me, mostly because it wasn't played it as "friends fall in love" but rather as some kind of B/A-redux done badly. A(us)/Darla is epic. That's all. And I still kinda squint at the Torchwood kissing clip to pretend Jack is Angel (not all the time but sometimes....)
I agree about Angel/Cordelia. Their BFF was one of my favourite things ever and the whole making them a couple kinda ruined it for me :( Connor/Cordelia creeps me out (says the girl writing Connor/Darla)

Exactly re: Angel/Cordy. I LOVED their friendship. They had such a great platonic dynamic. I didn't like seeing it messed with.

Canon ship I like - I don't have an OTP in BSG, but I can't pick just one ship I like. I like Kara/Lee because I like their buddy cop dynamic early on and I liked all the inherent angst they have re: Zak. I like Helo/Athena a lot, mostly because of all the ways they should be completely fucked up and manage not to be. I like Baltar/Caprica!Six because they hit my evilinlove kink hard.
Non-canon ship I like is harder. I wouldn't have minded Kara/Kat femslash though. Or Boomer/Caprica!Six. I can't decided whether or not I ship Adama/Roslin. Sometimes I really, really do and sometimes I think I like them better platonic.
Ship I don't like - Cally/Tyrol. SQUICKIEST RELATIONSHIP EVER.

QaF - I'm still a Brian/Justin shipper at heart, so that would be my canon pairing. I can't even think of a noncanon pairing I would have wanted to see. I like Brian/Mikey sometimes? But I don't even know if that would count as noncanon.
Pairing I dislike - I wasn't the biggest fan of Drew/Emmett and I felt very alone in fandom because of this.
I have not yet watched Carnival.
The Office - Jim/Pam and Ryan/Kelly (despite his recent asshattery) are my favorite canon pairings. Non canon . . . I don't know? I like Pam/Karen femslash.
Pairing I don't like - these days I'm not the biggest fan of Jan/Michael. I liked them a lot initially, but I'm pretty annoyed by what that whole plot line has done to Jan's character.

And I count Gerard/Bert as canon. Even if they didn't fuck they definitely had a relationship, and that's where the line is, for me. Ditto Pete/Mikey.
You totally do not have to feel bad! I completely support the rights of other people to not share my affections. For me it's Bob/Frank, which ilicits a great huge ":|" from me, because seriously, why. I do not want. But then, I'm a downer who runs with the stated queer-friendly agenda (ILU, Gerard!) over the "subtext" in fandoms where there is, you know, an explicit queer-friendly agenda.
Mikey/Alicia are probably my favourite of the canon couples. No, wait, Frank/Jamia. No- Fuck. I totally can't choose.

Canon - I don't even know. Sam/Jess? I liked Sarah a lot and I wish we'd seen her again. Sam/Sarah?
Noncanon - Dean/Bela. I want this so much. I don't really think we are going to get it, but I am holding out hope. Or Dean/Richie (from "Sin City") - not that we knew Richie all that well, but I have a deep burning need for non-Wincestuous Dean slash and fandom does not provide for me like it should.
Pairing I don't like - Wincest, with the qualifier that I don't like shippy Wincest. If it's angsty enough or dark and fucked up enough, I can find it compelling (though it's still almost impossible for me to buy, I can suspend disbelief and read the fic. There are angsty wincest fics that I like) and GOD KNOWS I have read my fair share of wincest in my time, but when it starts getting too shippy, especially if its fluffy, I tend to squick fairly easily.

There is indeed a lack of not-cesty Dean slashable pairings. Hmmm. I think that's where crossovers come in handy?
I actually don't find Wincest realistic in terms of canon, but I love the idea that they're completely wrapped up in each other, and are each others' worlds; the 'cesty ship just follows from that. Fortunately I pretty much hate fluff so I am spared the cutesy shippy crap. Heartbreak is my fav. (Well, that, and bodyswap-type crackfic. It's a sickness, I know.)

Fair enough. I don't like fluff all that much either, usually, so I was never in danger of reading a lot of it. And Sam and Dean are completely wrapped up in each other' they have SERIOUS boundary issues, no question. I just actually like their dynamic better and find it more interesting when it isn't sexualized.
(And hey, everybody needs a good crackfic every once in awhile).
