I can make homemade pudding with almond milk. It takes a little longer and it doesn't get as hard as store-bought instant pudding, but I can get it to set. That's why I'm wondering if I just didn't heat it long or hard enough. Of course, I was being careful so I wouldn't separate the heavy cream. It doesn't like being boiled...
Haha, yes, J can handle heavy cream for some reason. His is a weird lactose intolerance.
I'm going to try the extra gelatin first. I only used 2/3 of a pack to make 3 servings instead of a whole pack to make 4. A full pack for three might do the trick. If not, then I might try adding some cornstarch, though I'd hate to do that. It would mess with the flavor, I think.
I will, of course, thank your health nut friend profusely, however, if she has any suggestions. ^-^ Anything to make cooking easier.

I had tried to make creme with almond milk and it never set either.. I will have to talk to my health nut friend and see if she knows a trick.
