Hmmm. I've never tried any of this, but when you cook the pancakes do you put a lid on the pan? I was thinking, after the bottom is semi-cooked, when you add the berries and then add the top layer, put a lid on the pan so the top layer cooks just a little before you flip?
No, I never use a lid for pancakes and have never heard anyone doing that either. I mean, like classically you make them on a griddle, no? (I use a pan because I don't have a griddle, but still.) With a lid there would be condensation dropping into the pan, and that would be worse, similar to the effect of the blueberries bursting and making things soggy. By the time I flip pancake, the top layer is somewhat firm anyway, just not browned yet, otherwise flipping them would be a nightmare with the pancake batter dripping all over the place no?
