So remember how I didn't so much do the assignment last week? Tonight, doctorconquest and I put together two sauces to go on crêpes. The first was the Asparagus-Mushroom Sauce on page 77 of the New Moosewood Cookbook.

They wouldn't still be good when they got there. :) But seriously, if you make them in the blender, rather than trying to whisk them by hand, they really are that easy. I mixed up the batter while Kelly had his back turned, working on something else. When it got to be time to cook them, he blinked and asked when I had done that. It really, really helps to have a heavy, flat-bottomed, non-stick pan, though. I know crêpes have been around since before Teflon, but I've never encountered a modern French chef who would do without for them.

I went out with some coworkers for lunch at the Indian buffet place, and I guess to celebrate the restaurant's one-year-ago change of ownership, a waiter was walking around serving up - you got it - crepes!
You're right, stale crepes could perhaps be used as envelopes, instead of eaten. I'll try making them someday. Alton Brown did the blender thing, and it looked quite doable. Num num num. . .
