Oh, that both sounds good! I only found one kind of lactose free energy bars around here and it's with cranberries and really, really sweet. I think it contains a pound of sugar. I should try and make my own as well...

I created another batch of bars a while back ...made out of peanutbutter, unsalted cashewnuts non-dairy milk, salt and dates. I use a blender and "pulse" it so that it doesn't almost turn to flour. You want a chunky mix.
It sounds un-fun to clean up afterwards. But I got an expensive new blender for Christmas, it should at least work on crunching the ingredients okay. I need to try that...
Is it the milk that gets it to stick together? It seems to me I should add some honey or something? I understand it with the peanut butter, but the ones you posted don't contain any? Where does the stickiness come from?
I fill the blender with hot water and leave it to soak for a while ...then most of it just rinses out. It sounds like a bigger mess than it actually is.
It's the dates that make it stick together. The dates create a really really sticky mess when you blend them ...the milk you hardly use at all. You can even skip it completely since it's more of a flavour thing.
You want the mixture to be very sticky so that you can shape your bars. If it's not sticky enough, add more dates. Just make sure you either get seedless dates or remove them before you put them in the blender ;)
