Recipes, please

OK, so we did a Boxing Day dinner party where we cooked roast beef. A whole cow, almost. Seriously, we overbought.

So I have many pounds of medium-rare roast beef to use.

Yes, sandwiches are nice, but this is GOOD beef. I'd like to do more with it.

What do you suggest?

Cut it thick and have with a nice horseradsh cream sauce. Blend whipped cream with grated horseradish (not horseradish sauce) to taste and a little salt.

1) slice thin, wrap around asparagus or broccoli stalks, lightly saute and serve with a creamy sauce (cheese, horseradish, hollandaise, bernese, ....)

2) stew with your favorite BBQ sauce, shred with a fork and make a pulled beef
