Potatoes, kale, goat cheese and sauteed walnuts

Take about five or six boiling potatoes--three if they are as big as your fist. Chop into bite size squares. Boil 15 minutes. Save water for kale. Take ten medium size deveined kale leaves and cook them in the potato water. Drain. Sautee three garlic cloves in olive oil in skillet and two shallots, add cooked potatoes. Nice to have neighborly synergy like that - have yet to whip up a festive feast like that other than throwing meat on the grill, and there are eight of us living here!
