Potatoes, kale, goat cheese and sauteed walnuts

Take about five or six boiling potatoes--three if they are as big as your fist. Chop into bite size squares. Boil 15 minutes. Save water for kale. Take ten medium size deveined kale leaves and cook them in the potato water. Drain. Sautee three garlic cloves in olive oil in skillet and two shallots, add cooked potatoes. Add 1 cup chopped walnuts, sautee til toasted. Throw in cooked kale and then add about 4 oz herbed goat cheese. Serve with hearty bread and green salad. Mmmm.
(serves two) We did this with our neighbor. She wasn't sure what to cook for dinner--neither were we. That is the result. Mmm that was delicious. Salt and pepper to taste.

We make a lot of dishes using the process:
