Cod Recipes?

On a whim, I bought a bag of frozen cod, last week.  I don't like much fish but I do know that I like fried cod.  However, I am trying to eat healthier and I have no idea how I should make it ( Read more... )

You could always just simply steam it... I really liked steamed fish..any fish:)

I like to put the individual fillets in tinfoil with some veggies, salt, pepper and lemon juice, and "steam" them in the oven. I'm pretty random about preheating and what temperature I use (write stuff down?! what for? lol) and it always comes out yummy.

If you ever want to know your oven temperature (maybe for baking), you can use an oven thermometer to keep track.

I second this heartily; it also works (with different spices, maybe) with chicken.

I do a variant on stove: In a shallow, wide pan, teeeeniest bit of olive oil, pre-fry some onions and add spices to wet them. Put fish fillets in, pour some lemon juice to add liquid, more spices to taste, cover the pan and let it cook in a slow fire.

The way I cook most fish:

put on foil, but butter on top of fish, cover with foil. (Sometimes I also sprinkle with lemon pepper seasoning.) Cook about 15 mins at 375. It's freaking FANTASTIC.

you could look at making fish chowder -- i can't really give you a proper recipe because i do it off the top of my head, but i use milk and not cream and just mash some of the potato up to make it creamy.

also, most fish is very good when gently fried in a buttered pan. this doesn't add too much fat to your meal and is very good. a tiny bit of pepper and herbs is nice.

fish can be dipped in milk and breadcrumbs (a tiny bit of cheese or herbs is sometimes good as well) and then baked slowly on a lightly buttered pan or some parchment to crisp the coating as it cooks.

you can also wrap fish in parchment with thinly sliced veggies (steamed if they're firm ones) and herbs and bake until cooked.

I don't have the recipe, but on Food Network yesterday someone made cod cakes. You boil the fish, then flake it and mix it with olive oil, bread crumbs, onion, and seafood seasoning. Then you form little cakes, coat them with breadcrumbs, and bake them. They looked really good.
