you can also do pickled eggs by putting in hardboiled eggs that have cracks in their shell.

Any fresh veggies work this way. Cut the pieces small and you can get quite a bit in a large jar. Sliced Roma tomatos with cauliflower is nice I think.

I actually cook mine first and let them soak over night in the fridge, its faster that way
