Here's another one: El Cheapo Miso Soup. Miso is cheap where I live, but kombu is way too expensive and I can't get real katsuobushi--only that sweetened, caramel-colored, powdered crud. So I make it like this:

Put into a small saucepan 2 cups TOTAL plain water, homemade broth, and/or water saved from cooking vegetables. Add 1 boiler onion (that's a very small yellow onion typically sold in 3-pound bags for cheap), slivered, and a small handful of chopped vegetables (raw, frozen, canned, or leftover). Bring to a boil. Dip some boiling broth into a mug or heatproof measuring cup and put in 1 generous tablespoon miso. Stir until the miso is smoothly dissolved. Stir the dissolved miso into the pot and immediately take off the heat. Makes 1 big serving or 2 small ones. Serve with brown rice and a hard-cooked egg. This makes a very satisfying and cheap breakfast that will keep you going until lunchtime.
