Shininess is determined when you take the egg from the Daycare Man, not when it hatches...
So you'd need to re-hatch the egg after every reset, right from scratch after you recieve it.

Nightmare.

Yeah, it's predetermined - whatever's in the egg is determined the second the egg is created in D/P. (In FR/LG/R/S/E, it was when you picked up the egg, IIRC.)
