So here's what's been going on with our little furry terrorist... if you've got experience with cats and could offer any advice, I'd appreciate your two cents on this.
I'm going to second the thyroid check suggestion as well as the grain free problem. Definitely trust your instincts where that vet is concerned. My Romana (in my icon, but the sentiment she's expressing isn't for you :) had thyroid issues and it took a few tries before we found what worked, a combination of raw (fortunately I didn't have to make it myself!) and dry grain-free stuff.
Beck said he's not a moron but he's also not a specialist. She recommends you find an internal medicine specialist, because this guy probably will not be able to definitively tell you what's wrong.
Also, steroids are great for end of life treatment. They extend life, and give pretty decent quality, until the stop working. It gave us six months with Metpahor that we wouldn't have otherwise had.
Also also, yes, leukemia can be slow.

Friends of mine used to have a kitty with a rare disease which caused him to have low red blood cells. He was very tiny and skinny and often ill, but once they knew what ailed him he lived without much problems for a few years more (didn't get old, sadly).

You mentioned antibiotics, so presumably there was also a check for macroscopic parasites like worms?
