I made a blackeye pea and sweet pepper salad a couple of days ago, from a recipe from the NYTimes. Got around to eating it today for lunch. Incredible combination. Meanwhile two avocados were ripening on the kitchen window sill. I checked them out today - absolutely perfectly ripe. I used one to make a wrap to go with the salad. To. Die

Yup, as Ray will attest, we eat all kinds of beans around this house. I believe it's not only a southern thing, but perhaps a rural thing as well. My mom was from a very small town in central New York State, and she cooked a lot of things I know aren't familiar to city folk. Not that she cooked them WELL, mind you - in fact it's a general rule that the worst way to cook a lot of things was Josephine's way - but she did cook unusual stuff, from some people's standpoint.
Beans are an excellent and cheap source of protein.

Yes, beans are one of my primary sources of protein! Sometimes I'll make an egg and bean concotion for breakfast, and I feel full all day long.

I asked Ray today if I could get some steak for dinner tonight, if the budget could cover it. The way he answered, I gather he's tired of the tofu/bean/egg/cheese alternatives I've used to stretch our food budget while I've been on disability. He's such a good man, not to complain. Other women tell me their husbands won't eat veggies, other than potatoes, and the entree better have a lot of meat in it. I don't know what I'd do if Ray were like that.
