i hate making decisions.

Nothing is more likely to make me want to do something than deciding that I want to do something else. It never fails. I decided on the pastry school program. I had a great list of reasons! I usually find that having gone to all the trouble to turn in forms in the first place is usually incentive enough not to back out of whatever I've just done, since it would take twice as much effort to do the cancellation paperwork!

That said - good luck! And congrats on taking the first step. :)

The good thing about pastry chef school*, as opposed to that nasty-mathy biotechnology course, is that the skills will not ever go obsolete -- it is a craft that you can perfect whenever you want. It would be easy to keep up your skill set with practice, and you can work as much or as little as you like. And it would be fun, play to your strengths, and you can think about writing while you're beating meringues etc. :-) *hug hug*

*insert wistful sulking because I am not there to take the course with you

Seriously, the pastry thing sounds incredibly awesome. I understand what you mean, though, about making these big decisions and then having all these other thoughts take over and try to convince you why it's not a good thing, when it most certainly IS a good thing. Once you're actually DOING it, you'll see how awesome it is and everything will be great. Because I said so lol. <3

Pastry school sounds absolutely like a good decision. When you have two good options, you don't lose either way, and this way you get DELICIOUS PASTRIES as a sort of byproduct. I think doing it will be plently convincing that it was the right choice, and also, even in the future you have a choice about how much you want to do it... if you want to work a couple of hours a day at someone's bakery, or do catering only, or open your own patisserie. That last probably WOULD eat all your free time, but the other options wouldn't, so much.
