Cornbread

dremiel posted her cornbread recipe, so I'm going to post mine. It's the most basic recipe ever, but I get tons of compliments whenever I make it. NOTE: I grew up using Three Rivers corn meal mix, but they don't make it anymore. I miss Three Rivers cornmeal. I find White Lily to be a bit dry and not nearly as light. I now get my self-rising cornmeal from Old Mill of Guilford where they grind their own. It's good stuff but still not as good as Three Rivers!!

Cornbread and sweet milk (or buttermilk, if you prefer!)---late night snack food of the gods!!!

I have noticed that my cornbread is more crumbly with White Lily, which is probably the "bit dry" you mention. But I think it still tastes as good.

I'll have to look for Old Mill of Guilford.

It takes timmmme and loving care to get a new Cast Iron, well "treated". That's how it goes from metal colored cast iron to a "Black Iron Skillet". Just to brag a bit, my 10 inch round is so black that you can see your (vague) reflection in the bottom ( ... )
