Moose fat and jelly

I just took care of a big bag of fatty moose scraps. So now I have another 1.5 kg of clean moose fat (in addition to the kg I have since before), and about 1 kg of what an best be described as moose jelly (bland stock with so much gelatin in it that it is dry to the touch and quite rubbery).
