Moose fat and jelly

I just took care of a big bag of fatty moose scraps. So now I have another 1.5 kg of clean moose fat (in addition to the kg I have since before), and about 1 kg of what an best be described as moose jelly (bland stock with so much gelatin in it that it is dry to the touch and quite rubbery). At least some of the fat will be made into soap (we are running short), but what from the "jelly"?
