Dammit, today was Pancake Day, and I forgot! And I have no eggs, so I can't even have a pancake supper. I have to draw the line at nipping down to Tesco in my pyjamas to buy eggs.

Funny thing, I like pancakes, but I hardly ever make them. It's not like they're hard to do or anything. Most often it's because I buy eggs when I have a big baking project going, and don't have a lot left over for fun things like pancakes.

Maybe I'll make sure I've got eggs and milk in the morning, because now I'm longing for pancakes... and it's all your fault, dammit!

Given that it was a friend telling me how delicious her pancakes were this evening that made me want them, I feel like I've just passed the favour on! Have them tomorrow, enjoy them, and have an extra one for me!

I think the reason I don't make them often is because the batter needs to sit for half an hour, and I always want to make food NOW!

Yeah, the waiting bit isn't my fave, either. Hmmm... suddenly what I want is ebelskivers. If you've never had them, they're like little pancake puffs filled with jam. Mmmm... delicious.

Sure! Usually they're whole wheat. Occasionally buckwheat. And sometimes there are blueberries. :)

Whole wheat is good! Do you roll them around the blueberries? I sometimes have fruit, but usually good old sugar and lemon.

Whenever I have time (which is every other morning, lately), I have chocolate chip pancakes with french vanilla whipped cream.

And I just realized that it sounds a lot more indulgent than it really is. I use pre-made mix, and Redi-Whip. I'm the laziest chef on the planet.

I'm trying to imagine chocolate chips in a pancake, and failing! Though maybe sprinkling them on when it's cooked and rolling them up so they melt inside - hmm, yes. Is that what you mean?

Nope. You add them straight to the batter, and pour and cook them like normal pancakes. The chocolate chips get all gooey and melty.

That looks really tasty, especially the banana and nuts on it (nuts, banana and maple syrup, yum)! Though it looks more like a pikelet than a pancake to me.

Definitely different recipes - the batter for pikelets is a lot thicker, so it holds together when you spoon it on the hot plate/griddle/pan, whereas pancake batter spreads nicely. I expect there are other differences too.

I make mine with cornflour (hooray allergies) but do them several times a year. I keep it rare because they're not good for you. Though I rarely leave the batter more than five minutes. :)

Doing without wheat must be tough!

I think they're probably not so bad if there are plenty of people around to eat them up - worse if it's just one person, and a big bowl of batter! *g*

It's not so bad. I get excitable over the weirdest things (last weekend I found a cafe that did cheesecake I could eat. I haven't had cheesecake since I was 21. Or hadn't. I have now rectified that problem and it is yummy. Also, I miss Bran Flakes. Which probably makes me weird!

Hehe, that's true. I had a whole Ranger unit last night. They don't go that far with 12 teenagers!
