refrigerator surprise

we're nearing the end of this week's vegetable box; last night the only survivors were wax beans, lemon cucumbers, and cherry tomatoes. i turned to epicurious for inspiration, and found a nice recipe for pasta with capers and cherry tomatoes... that called for a 2 1/2 hour cook time. or not.

it worked out pretty well, modulo ( the contents of our fridge... )

(lemon mint - odd, but yummy)

It's fabulous in mojitos. Or in Vietnamese style garden rolls. Also in Mediterranean (specifically Lebanese) style vinaigrettes. The mint flavour on a salad is a little different but quite pleasant.

(note to self: skipping dinner bad)

ooh, that sounds good! i do something similar but with a roasted garlic & cream cheese stuffing. :) i'll bet the pesto is tasty too...
