I've done that and it works, but only for a few hours. I got a fruit cup from chik-fil-a and, three days later (I put it in the fridge and forgot about it) NO BROWN.
This is truth. If we had done this before, I'd be for it maybe. If the idea was more one dimensional (flat panels layered to give the appearance of 3-D) I'd be for it. But this is sort of retarded.
A combination of 4-hexylresorcinol, isoascorbic acid, a sulfur-containing amino acid (N-acetylcysteine), and calcium propionate has been found to delay browning by up to a month. They're all "generally accepted as food-safe" chemicals, btw.

A less super-strength mixture of similar chemicals are used in Nature Seal (see http://www.natureseal.com/faqs.asp).
