How's this for a company dinner?

  • Black Bean and Acorn Squash Empanadas
  • Guacamole
  • Pico de Gallo
  • Rice, flavored in some as-of-yet-undetermined way
  • Chopped Salad with mixed greens, tomatoes and blanched corn
  • Bluevado Pie

I know that one of our guests really isn't crazy about vegetables. She eats them because she knows she should, but she's got very unadventurous tastes. She'll eat salad for sure, I don't know what else. I'm thinking perhaps a dish of turkey mole, but how do I present it as a side dish? People are used to having the meat be the centerpiece. Maybe bring in the empanadas first, start that around the table and then put the turkey with the guacamole and rice? I want to have enough for people to eat if they really hate the empanadas, but I don't want to feature it, if you catch my drift.

ETA: Maybe, since these folks know about our new diet, I can announce it as experimental, with turkey on the side for people who want it. Explain what's in each dish, etc.
