I support nnwest's theory: that someone might get called "The Face of Boe" if they're really vain or think so hugely of themselves. Like calling a fashionista "Paris" or a wannabe diva "J Lo".

Jack's lines at the end of "Last of the Time Lords" reminded me of a great line in an IM from the extranet on the official BBC Torchwood site:
"TOSHIKO: We still know so little about him. He gossips like my Auntie, but it never adds up."
I always took this to mean that we aren't supposed to believe everything Jack says. Afterall, are there really contraceptives in the rain? (It seems unlikely) And did he really get pregnant once? (Well, if part A wasn't true, maybe part B wasn't either?)
Why can't his story about being called the Face of Boe be exactly the same thing? He's making enigmatic chitchat, nothing more, nothing less.
He lies to the Doctor about aging to allow the Doctor to feel better. Thinking Jack was "a fixed point, a fact" was just too much for the Doctor to handle, and it's easier thinking of Jack as having an end, someday

I love your ideas, and now I'm torn. He either does age, but it's from stress and when he dies it's 'reset', or he doesn't, but he just pretends to get older to comfort the doctor.
