Currenty, I'm guessing that 'Face of Boe' is something like a title, handed down generations, like 'Mister Universe' or something...

He lies to the Doctor about aging to allow the Doctor to feel better. Thinking Jack was "a fixed point, a fact" was just too much for the Doctor to handle, and it's easier thinking of Jack as having an end, someday.

On the Face of Boe side, the Face has gotten acquainted with Jack in his earlier conman days, and Jack tells him what to say to the Doctor when they meet again millennia down the line.

See? Simple.

Or...

Jack was totally sincere when he said that, but just worried about the possiblity of aging as over the last year when he was chained up he found his hair getting a bit grey. However, that was from stress, and as soon as he dies again it resets.

The Face of Boe, then, is maybe an alien who Jack finds and helps, maybe gives that name too as a wee homage to himself, and possibly gives a fair amount of his lifeforce to.

(Maybe the Face of Boe is his son, and the 'father' is a very weird alien indeed. Some of Jack's power goes to him that way, but it doesn't necessarily carry on to the grandchildren.)

Again with Jack telling him what to say, or possibly giving him some of his memories of the Doctor.

Or...Jack is the Face of Boe, as in that's his disguise/alias, and he doesn't die permanently in Gridlock (he's just out for a good long while.) After all, if he can travel in time, and speak telepathically, it's not too much trouble to disguise his physical shape. (Perhaps the real Face of Boe was the one in End of the World, and it's Jack!Face the other two times.)

(Of course, that brings up questions of why disguise himself.)

I love your ideas, and now I'm torn. He either does age, but it's from stress and when he dies it's 'reset', or he doesn't, but he just pretends to get older to comfort the doctor.

either way, I'm happy :)
