I omitted the raisins because mixing sweet into savory is a crime.

Nonsense! We're not talking crushed peppermint candies here, we're talking about adding complex flavors that include some sweetness.

To get a real feel for raisins in savory, go for Sicilian recipes. I had a good one a while ago where you basically braise swordfish steaks in a pan with olives, onion, garlic, raisins, and madeira.

Or are you just one o' them raisin-haters?

I think he is. When we was younger he had an elaborate lab to turn rasins back into grapes, but after one escaped and killed a nun we had to put a stop to those experiments.

I am also a raisin-hater, but I would also have disapproved of, eg, apples in the same place.

Really, it's got onion and marjoram. That's more than enough sweet flavor for any decent savory recipe.

I now have a very clear mental image of using a toilet plunger to stuff a pork chop, which amuses me greatly. :)
