That sounds really good.

What is the base you use for your cordials? I still have not gotten to making them (yet) but have very much enjoyed tasting them when I have had the chance.

Making a mead from the Meyer Lemon honey could be a fun experiment.

I use vodka, as it is the most flavorless of the liquors. Best of all is going to Costco for a GIANT bottle of Ketel One or something. The last time though I used this nice vodka I got at my new favorite liquor shop, Crossroads on 14th street. They recommended it and I can't remember the name. It was $18 for about 750 ml though. Not bad, and very clean tasting.

We just bottled our mead, but if I had had the lemons before hand, I probably would have just juiced them and extracted the zest oil in a "tea" to add at bottling time. Mmm.

The next mead I want to make, I want to use riesling yeast with it!
