So, I have a food intolerance. It's not an allergy; I wont keel over and die if I eat it, cursing my beloved Pop Tart as I take my last breath. Nope, my body just doesn't process wheat or gluten well. If I eat it, I feel tired and I usually have a lot of headaches. So what has my solution been for the past 4 years?? I'm coeliac, so I've been on a super strict gluten free diet for about 13 years. It is getting better. At some point in the relatively recent past gluten free became a diet fad and consequently you'll find most reasonable places will now cater for it without rolling their eyes and giving you a plate of steamed vegetables and a weak excuse about it being the only option. And honestly eating out was the one thing I did miss before, I tend to cook a lot at home though so that was never a big hassle for me.

Also, we don't have them here but apparently gluten free croissants exist in America. I swear to god I will pay you to ship me some if you ever come across any on your gluten free adventures.

The gluten free mac n cheese I had last night was terribad. ;( It was Amys Brand. I really love macaroni! I'll have to experiment with making it from scratch with different gf options.

Was it with the soy cheese or the regular cheese? (I don't know if you're avoiding dairy at all.) The one made with soy "cheeze" is... ucky, but I found that if you add some onion flakes and/or garlic powder and red pepper to the gluten-free (but not dairy free) version of Amy's Kitchen mac'n'cheese it's not so bad. Compared to the gluten kind, yeah, it's not the best, but if you don't compare it I've found it tastes better (just my $0.02, hehe).

Its the regular cheese. Today I added some aged Parmesan and garlic powder to it. Much better! Thanks for the tip!

There are some nommy bits of gluten-free goodness out there, still, though. Obviously not as convenient as McDonald's (EWW haha), but still. Look up stuff made by Amy's Kitchen (for entrees if you want to buy frozen ones for quick meals sometimes; their Mexican dishes, especially the enchiladas, are delicious - nice and cheesy). Also look for stuff by Glutenfreeda (I think is the name? - they have really good breakfast burritos). I also know that there are gluten-free doughnuts you can get to warm up in your microwave and eat, and I am pretty sure those are also by Glutenfreeda although I might be wrong ( ... )
