I've become a cooking fiend lately. Formerly I was the Queen of the 30 Minute Meal (move over Sandy Rae or Rachel Ray - whatever your name is), and now I'm becoming the Queen of Made From Scratch. Tonight I made my Mom's white bean chili recipe for dinner. I didn't have canned beans or canned green chilies so I soaked dried beans and saute a green ( Read more... )

You can duplicate the canned chilis by roasting fresh chilis on a flame or under a broiler 'til the skin turns black, then put it in a plastic bag to steam for a bit, then rinse off the skin and seeds under water. Here's a description.
