Coffee/Almond Milk issue

I have a question for any lactose-intolerant or vegan coffee drinkers out there. Why does my almond milk sometime separate from my coffee in the cup? I don't eat or drink soy products anymore but I found this would happen with soy milk too. The weird thing is I feel like it only happens sometimes! I have found that the best way to not ruin any sort of milk in hot drinks is to put the milk in the cup first, and then add the hot drink.

Milk in last scalds much of it which ruins its proteins, is what I've been told, whereas with milk first, the hot liquid almost immediately cools when hitting it, and the temperature is never taken to a height where it scalds and ruins the milk.

that was part of the reason i switched to coconut creamer for my coffee. it doesn't seem to have the same problem.

Mostly. I tend to forget mine periodically and if I let it cool, it will start to act peculiar.
Once I left a cup out for a week and found it terrorizing my cat.

i don't know for sure, but i would guess it's because of the oils in the almonds. maybe some of the almond milk you're using has a higher oil content than others.

You could try MimicCreme. It doesn't separate. It's made from almonds and cashews.

i second putting the milk in your coffee first. it really helps! although its not quite tea, i learned this little trick from an article i read on making the perfect cup of tea in the Guardian (apparently there is a real scientific reason why the milk should go in first):
