Brown rice syrup is another good mixer. I notice it on the ingredients list of a lot of natural protein bars. Also, agave has a very low glycemic index and you could mix it with the almond butter to add some sweetness.
The problem with using agave, though, is that it isn't low in carbohydrate and all of that sugar turns into serum glucose, just not as quickly so it doesn't (allegedly) spike your blood sugars (thus the reason that some people think that it'd be good for diabetics... it still spikes my glucose levels, though).
For someone using a low-carb diet to help with candidiasis or other candida-related problems, is that the sugars feed the yeast whether they spike blood sugar or not.
The problem I hit when looking into bars is that energy/nutrition bars all use various sugars as binders and an energy source. So they were out for me (I eat very low carb for blood sugar control).
If you eat meat, pemmican bars are lovely, though. I like to add some dried berries or a bit of homemade cranberry sauce (i make it with just enough sugar that it doesn't pucker my mouth -- it's VERY tart).
If you can have nuts and seeds on your diet, you could experiment with homemade nut butter, but it's not going to hold together the same as using sugar; you might want to make small balls on some parchment, freeze til hard, then store in jars in the freezer.
might try adding egg to your nut butter as a binder (assuming that you plan to bake the bars). It'll make for a firmer bar that won't readily fall apart.
