What I like about Moosewood is they also take the time to explain. Like what is in tofu, what are the benefits of soy, what makes these veggies go wrong, how to make your potatoes have a different texture...and it's really good reading.
I have. I think they make very good points. The cultures that eat 'soy regularly' eat very little... we have soy shakes, soy bars, tofu, all sorts of stuff. It can do a lot of damage if you're not careful. Soy definately has some benefits, but you have to be good about your intake.
