I've been making these gingerbread cookies for years and they always turn out really well. A little labor-intensive but delicious.

My best gingerbread trick is to go to Trader Joe's and buy their gingerbread mix. No, really. Works like a charm. Every year the people at work beg me to bring it in. *g*

This recipe doesn't really work if you're trying to make gingerbread men, but I made these cookies last year and got rave reviews: Gingerbread Cake Cookies

I don't know if they have to be shaped like gingerbread men. We might want to concentrate on getting it to taste right first.
